The aesthetic concept of Wabi-Sabi springs from the ancient traditions of ​Japanese Zen, wherein beauty is defined by imperfection. To Wabi-Sabi, ​wines made with minimal intervention cannot aspire to the perfection of ​mass-produced, fruit-driven, sterile, and rounded wines. A wine of the ​Wabi-Sabi kind reveals its quality as a living entity, bearing all its ​peculiarities and imperfections. Such wines, with their unique character ​and individuality, are far more authentic than those concocted in the ​sterile confines of a wine laboratory.


The Achleiten vineyards, with its gneiss and amphibolite soils overlooking ​the Danube in Wachau, is a perfect home for Riesling and Grüner ​Veltliner. This Wabi Sabi Grüner from this unique parcel isn’t your ​common grape juice. It leans into the herbal side of the aromatic ​spectrum, offering a firm grip. Its strength lies in its personality, not its ​alcohol.

Seckinger is solely committed to organic and biodynamic farming. They're ​part of the "Fair'n Green" initiative, pushing for eco-friendly wine in ​Germany. The winery is shining bright in Pfalz, earning major respect and ​recognition ,and crafting a wide variety of wines such as Pinot Blanc, ​Pinot Gris, and Pinot Noir; but what they’re really famous for are their top-​notch Rieslings.


The Rieslings come from grapes grown on the scenic slopes of the Haardt ​mountains. The soils are super diverse, ranging from mottled sandstone ​to chalk and loess. Ruppertsberg Riesling shows obvious signs of Jura ​influence: fine oxidative vibes with notes of brioche, flint, and herbs on ​the nose. You’d never guess this was a Riesling just from the smell. We’re ​loving this wine because it truly lets the soil shine. On the palate, you can ​really taste the limestone influence - it’s got that salty kick without any ​harsh acidity

Salvador “Salva” Batlle carries the countryside and nature in his veins. He ​was born to a viticulture family based in Baix Penedès, where they ​worked 22 ha of vineyards, selling the fruit to large wineries in the area. ​By the time he was nine years old, Salva already knew how to drive a ​tractor and at 16 he made his first wine. His creative path is devoted to ​producing pure integral wines (each grape variety is approached ​separately) - pureness upon pureness, with the lowest intervention and ​the highest respect for nature.


Gratitud is one of the rare wines in Salva’s selection that uses ​international grapes. Here we’re talking about Sauvignon Blanc that ​perfectly adapts to the warm region of Penedès. Aleks chose this wine as ​it represents not just gratitude to the farmers that cultivate the grapes, ​but also to the earth on which the fruit is grown. This is where the ​essence of natural wine is - it’s not about the “eccentric”, “funky” flavors; ​it’s about the farming. If we don’t take care of the earth, we can say ​goodbye to true wines.
