Maison X Institute

Previously a sommelier at Joël Robuchon in Shanghai, Spark Jiang developed a passion for fermentation and decided to explore the infinite possibilities of natural brewing and fermenting. This resulted in the 2019 founding of Maison X Institute, as well as the moniker 'Bread' within the winemaking circle.
Spark firmly believes that the essence of natural wine lies in high-quality grapes, so all his wines are 100% naturally made, with zero intervention and zero addition to maintain the purest flavours. Like his personality, his wines are vivid, confident, and full of unique character.
